ROLE OVERVIEW
The Server is responsible for food service and guests, aiming to serve selflessly. The essence of the job is anticipating guests' needs before they ask. Flawless execution is expected every time — not only in what is served, but in how it is served and how guests are made to feel.
CORE FOCUS
Greeting Guests & Departures · Taking Orders · Bartending · Delivering Drinks · Table & Silver Service · Guest Care · Cigar Service · Inventory · Cleaning of service areas
A PRINCIPLE OF SERVICE
"Nøgen servers are the lifeblood of our offering — you are the ones who enchant our guests and leave a lasting impression for years to come."
RESPONSIBILITIES & STANDARDS
Table Service
Serve from the guest's left; clear from the right; use serving fork and spoon for silver service
Crumb the table between courses — the elegant detail that resets the stage
Practice mise en place: everything prepped, polished, and in place before service begins
Guest Care
Observe body language and conversation to anticipate needs before they're voiced
Refill water at half-full; offer another drink when a glass is nearly empty
Use the 2-bite, 2-sip check-back; note and remember preferences for future visits
Delivering Drinks
Tray with coaster, plan the path, enter the guest's field of vision, and present the cocktail
Place coaster then drink — "Please enjoy" — ask if anything else is needed, and return shortly to check satisfaction
Bartending
Master the tools: shakers, strainers, jiggers, muddlers, decanters, and the full glassware library
Build custom cocktails from the guest's spirit and flavor profile — and present them with a story
Polish glassware, keep tools organized, and match fresh ice to the cocktail
